Ingredients for Yenne Badnekay:
Brinjal – 250 gm
Onion – 3 (Medium size)
Ginger – 2 inch
Garlic – 10-12 pods
Green chili – 8-10
Freshly grated coconut – 1 cup or ¼ coconut
Fresh coriander - 1 fist full
Oil – 4-6 tablespoons
Mustard
Chana dal
Urad dal
Curry leaves
Salt
How to prepare:
1. For griding the green masala – Add 1 chopped onion, ginger, garlic, green chili, freshly grated coconut, and 1 fist full of fresh coriander. Grind all the above ingredients with a small cup of water.
2. Take a pan, add 4 spoons of oil, add mustard, chana dal, urad dal, and curry leaves. Then add 2 onions (sliced long and thin). Fry the onions for a minute and add brinjals (sliced into long thick pieces) and fry for a minute.
3. Add the ground green masala to the fried onion and brinjal. Mix all the above and allow it to cook for 10 -15 minutes on low flame. Stir occasionally. (Do not add water)
4. Once the brinjal is half cooked add the required salt to taste and allow it to cook for 5 minutes.
Tasty yenne badnekay is ready to serve. Tastes absolutely amazing with hot rice and ghee.
