Bheemu Attukulu (Akki Avlakki)

Ingredients required :

Rice - 250 gms

Onion - 1

Tomato - 1

Beans - 6

Carrot - 1

Potato - 1

Hing - 1 pinch

Salt as per taste

Tamarind - Half lemon size

Jaggery - peanut size

Green chilly - 4 to 5

Oil - 3 tablespoon

Turmeric - 1/4 spoon

Curry leaves

How to prepare :

1. Dry roast the rice in the pan until it turns slightly golden. Keep it aside to cool down.

2. Wash the rice once it cools down strain the water and keep it aside.

3. In a pan or pressure cooker add 3 tablespoons of oil, temper it with mustard then add green chilly, curry leaves, add onions and fry for 2 minutes.

4. Then add beans, carrot, potato, tomato, and fry for 2 mins. Add a pinch of hing, turmeric, salt as per taste and at the end add tamarind and jaggery.

5. Fry all the above for a minute and add washed rice. Add 3 measures of water and allow to cook. If in cooker allow 3 whistles.

Enjoy the simple and light breakfast which tastes absolutely yum.
